Favorite Plant Friday: Snow Pea Shoots
Inspiration for growing this plant: This is a popular winter crop in my CSA (community service agriculture). When we do get it in our CSA shares it quickly disappears in my house b/c both me and my daughter will eat this.
What do I love about this plant: I get nice fresh greens in the middle of winter (I am talking middle of the cold, polar vortex, snow every day winter). It is very quick to grow.
Hardcore healthnuts (not me) will say that eating "shoots" or "sprouts" are the most nutritious foods because the plant stores a lot of good energy and nutrition into sprouting the seed. So eating the young plants before they mature are incredibly nutritious. Some people go as far as saying that people who eat sprouts and shoots regularly should be offered lower insurance rates because they are healthier.
Growing tips: You are not looking to keep this plant alive for very long so really its quite easy. Put seeds in soil, layer with a 1/2inch of dirt, water done. For beginners though the trick to this plant is really not over-watering.

How do I use it in cooking: I eat it raw as a salad with roasted sesame seeds and homemade asian dressing (olive oil, rice wine vinegar and a little soy sauce, you can probably throw in some ginger too). Given my daughters love of salty foods she likes to eat it this way as well.
I am not a big salad person but this is one of the greens I will eat as a salad.
